Our home is never without a box of these rock cakes. The recipe is similar to scone mixture, meaning they're easy to make, delicious and one is never enough.
Ingredients
14oz self raising flour
6oz demerara sugar
5oz soya spread
2 heaped teaspoons of ground ginger
7oz Seedless Raisins
4oz flaked almonds
A little soya milk to mix
1. In a bowl, seive the flour and ground ginger. Add the sugar and mix well together
2. Add the soya margarine and with your fingers rub it into the dry mixture until it feels like dry grainy sand.
3. Add the raisins and almonds
4. Turn on the oven to heat through
5. Add a little soya milk to the dry mixture and mix together with either a wooden spoon or your hands. At first, the mixture will feel very sticky, but it should come together into a smooth dough. Be careful not to add too much fluid.
6. Sprinkle some flour on a clean bench and roll out your mixture until it is about 5cm thick. Cut out and place on a tray,which you have lightly greased with the soya spread.
7. Place in the oven, gas mark 6, for approx 25 minutes or until golden.
